Fiesta Pork Roast

When I find a new (to me) recipe that we like, I’ll go ahead and post it here.  I normally don’t like pork roast.  I think because growing up when we had it, it always tasted really greasy.  This one wasn’t at all.  It made the house smell terrific while it was cooking and very strongly of the fajita seasoning.  Once it was cooked and plated, it didn’t taste strongly of the seasoning, but just enough.  It needed a bit of salt and pepper, but other than that, it was yum.

Fiesta Pork Roast

Ingredients:
4 pounds  pork tenderloin
1 package  fajita seasoning mix
1 each  green bell pepper — cubed
1 each  red bell pepper — cubed
1 large  onion — cubed
4 medium  red potatoes — cubed
1 tablespoon  vegetable oil

Directions:
You will need a large plastic bag (large Ziploc works well).  Place all ingredients into plastic bag.  Toss to coat well.  Place pork roast in the center of the crockpot, surrounding with vegetables.  You may also add 1/4 cup water if you prefer sauce.  bake on low for 6-8 hours.
